Not specific to SAS, but a very good book on lots of regression models is

Long, JS Regression models for categorical and limited dependent variables pub. by Sage

but it only has a few pages on Poisson

More technical and much more detailed i

Cameron and Trivedi Regression analysis of count data....

but given what you say, it may be too technical
