I am trying to find the best way to transform a likert-scale with 5
anchors
to a 7 anchor scale. Any good ideas?

There is not enough information here to let me answer.
Do you mean transform the results, or transform the scale? (That is,
do you have a set of responses and want to change the numbers, or do you
have a set of questions and want to change the responses?)
If the former, how was the original scale scored?
If the latter, what are the answer choices on the original scale?
In any case, why do you want to do this?
Please respond back to the list (not to me personally), and one of us
may be able to help (it might even be me)
